Summer is my favorite time of year. The world seems better with warm weather and sunshine. One of my favorite parts of Summer is all the backyard BBQs. These crockpot baked beans take very little effort, but are big on taste. So whether you are hosting or you are bringing them along as a dish to pass, I recommend you try this simple side dish as we launch ourselves into Summer vacation.
Start by prepping your ingredients. Drain and rinse all your beans. You can use any kind of bean you like. If one of the ones on the list does not appeal to you, double up on another or add something new. I like the variety of using a selection of different beans, so be as creative as you dare. Next chop up your favorite onion. I used red onion, but any onion will do. Now it is time to chop up about a half a package of uncooked bacon. I use nitrate/nitrite free uncured bacon, because I try to keep things free of as many extra preservatives as I can. Add the onion and the uncooked bacon to the crock pot with your beans. Finally, add the ketchup, honey mustard, brown sugar, and water. Stir everything to combine and set your crockpot on Low for 4 hours. The whole process takes about 5 minutes.
Now you are free to do other things. When I created this recipe I was throwing a birthday party for my little man. So I ran around finishing up last minute details while the beans did their thing in the crockpot. Minimal prep and you’re ready to go is the reason crockpots were invented in my humble opinion. At the end of 4 hours, look at what you have.
Since I am slightly crazy, I test new recipes at parties all the time. Luckily nothing has been a mega flop when I am feeding 20-30 people. For this event, I made half the food and ordered the other half. I served these tasty beans next to mac & cheese I made myself and fried chicken, and shack potatoes from our local Chicken Shack. Everyone ate until they were full and the party was a huge success. Not bad for our first Summer Celebration. Happy Cooking!
Crockpot Baked Beans
- 1 15.5 oz can Black beans
- 1 15.5 oz can Cannellini beans
- 1 15.5 oz can Red beans
- 1 15.5 oz can Pinto beans
- 1 onion chopped
- 6 oz chopped bacon uncooked
- 1 cup ketchup
- ¼ cup honey mustard
- ½ cup brown sugar
- ¼ cup water
- Drain and rinse all 4 cans of beans. Put them in the crockpot.
- Add onion, bacon, ketchup, honey mustard, brown sugar, and water to the crockpot. Stir to combine.
- Set the crockpot on Low Heat for 4 hours.
- After 4 hours beans are ready to serve and can stay set on warm for hours.
