Hearty Lentil Soup – Set it and Forget it!

I love soup. I also love things I can throw in a crock pot and not worry about for the rest of the day. Crock pot recipes with stages and steps are not my favorite.  I honestly want to “set it and forget it” as the saying goes.  When it comes to soup, I think many of them taste better the longer the ingredients have to simmer, which also makes the crock pot a perfect avenue to allow your ingredients to meld together.

My New Crockpot

My mom gave me a new crock pot for Christmas.  The old one was malfunctioning and this one is a serious upgrade.  I love the digital display and the ability to choose your cooking time, instead of being held to 8 hours on low and 4 hours on high.  I also love the locking top, because I do like to share my food with family and friends.  Click on the picture below to see the details if you are in need of a crock pot for your home.

The Perfect Lentil Soup

I am a huge fan of all legumes! Lentils, Beans, Peas – they all make for hearty meals with lots of quality nutrition. I like to make soup and eat it for lunch all week.  I also love to freeze soups.  So a recipe like this one will become lunch for a couple weeks.  Add your favorite bread and it is also hearty enough for a simple dinner.

Set It & Forget It

Hearty Lentil Soup is one of those “set it and forget it” meals.  All the ingredients go into the crock pot, stir to combine, set the temperature and you are done.

The soup pictured above is made with cabbage and is meat free. I also enjoy using chopped Kale and adding some sliced smoked sausage for a slightly different take on the same recipe.  At the end of 5 hours, ladle into bowls and you are done.

Hearty Lentil Soup

Easy, slow cooked soup.  Perfect for lunch or dinner.

Cook Time 5 hours
Total Time 5 hours 10 minutes
Course Main Course, Soup
Servings 10

Ingredients
  

  • 2 qt stock vegetable, chicken, or beef
  • 1 16 oz bag dried lentils
  • 1 onion chopped
  • 3-4 Carrots chopped
  • 3-4 potatoes chopped
  • 1 15 oz can diced tomatoes including liquid
  • 30 oz water use diced tomato can for measurement
  • 1 tsp dried thyme
  • ½ tbsp chopped garlic
  • 2 bay leaves
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • 1 tbsp ground mustar
  • Salt and Pepper to taste
  • 1 small head chopped cabbage choppped Kale works as well
  • 1 pound sliced smoked sausage optional

Instructions
 

  • Add all ingredients to a large crock pot. Stir to combine
  • Cook on HIGH for 5 hours
  • Remove bay leaves and serve.
