I would love to declare that I have 7 days of meals perfectly planned and prepped every week with ease. But, alas, this is simply not my reality. I do take a look at the week every Sunday or Monday and see what is going on that might affect my food choices. I look for late days and plan crock pot meals or leftovers. I love dinners that can turn into prep for a second meal. For example, if we are having chicken or pork, I cook extra so that the leftover meat can become enchiladas or quesadillas later in the week. I try to set things up so that dinner can be done in about 30 minutes. I figure no matter what time we walk in the door, 30 minutes is a reasonable amount of time for the famished kiddos to wait before there is a mutiny.
