
Stuffed Cabbage Soup – Simple Comfort in a Bowl
As a good Polish girl, I love the flavors in stuffed cabbage rolls. But truth be told, I am not a huge fan of the roll itself. To fix this small snafu, I created stuffed cabbage soup. All the delicious, comforting flavors simply in a bowl for your enjoyment. Here is the process to put this recipe together.
Prepare your Ingredients
The first step for Stuffed Cabbage Soup is to prepare your ingredients. Slice your onion then add it, ground beef, and minced garlic into the pan. I buy minced garlic in a jar, feel free to mince your own. Stir the ingredients on medium high heat until ground beef is fully cooked. Then chop your cabbage and put it to the side.
Everything Into the Pot
Put your favorite soup pot on a burner at medium high heat. Add meat mixture, chicken broth, and tomato sauce to the pot. You can use homemade or boxed/canned ingredients. I use both! For my bone broth recipe click here and my tomato sauce method click here. Bring the pot to a boil. Once boiling add thyme and mustard. Stir to combine and turn heat down to medium low. Then add cabbage and rice/quinoa if you choose. I did not add the rice in the recipe pictured.
Simmer, Simmer, Simmer
Place a top on your pot and simmer soup until cabbage and rice are fully cooked, about 30-45 minutes. Watch and stir the pot regularly. Depending on your stove you may need to turn the pot down to low. Keep the soup at a simmer, no need to boil.
Ready to Serve
Now it is time to eat! Serve Stuffed Cabbage Soup on it’s own or with some delicious, crusty bread. Side note – I made a small batch of this delicious soup in the pictured examples of each step. Stuffed Cabbage Soup
Ingredients
- 1 large onion, sliced
- 1 tbsp minced garlic
- 1 lb ground beef
- 2 qt chicken broth
- 16 oz tomato sauce
- ½ head chopped cabbage
- 1 tsp dried thyme
- 1 tbsp Dijon Mustard
Optional Ingredient:
- ½-1 cup rice or quinoa
Instructions
- Put a large skillet on stove on medium high heat.
- Add ground beef, onion, and garlic to the pan. Stirring often, cook until meat browned and onions are translucent. Approximately 10-15 minutes.
- Once cooked, add meat mixture to a large soup pot.
- Pour broth and tomato sauce to pan. Turn on high heat and bring to a boil.
- Once boiling add thyme and mustard to the pan and turn heat down to medium low. Stir to combine.
- Add cabbage to the pot and stir. If adding rice/quinoa add to pot now. Stir to combine. Place top on pot and simmer for 30-45 minutes. Adjust heat as necessary. Depending on your stove you may need to turn heat down to low.
- Stir pot occasionally as simmers.
- Once cabbage is soft and rice is fully cooked. soup is ready to serve.
