Smoked Sausage and Sweet Potato Noodles

  • cups sliced fresh mushrooms
  • ½ small onion diced
  • 1 tsp minced garlic
  • 1 cup chopped broccoli crowns
  • 8 oz tomato sauce
  • 2 tbsp cream cheese
  • 1 cup smoked cheddar cheese colby jack also works well in this recipe
  • 1 lb smoked sausage sliced
  • 2 large sweet potato, spiralized
  • 2 tbsp olive oil


  • Add olive oil, onion, garlic and mushrooms to a large, deep skillet. Saute until mushrooms and onions cook down.
  • Add broccoli to the pan. Saute for 5 minutes, stirring often.
  • Add tomato sauce and cream cheese to the pan. Mix until cream cheese melts into sauce.
  • Add cheese and stir until melted.
  • Add sliced smoked sausage to the pan, cover and simmer on low heat for 5-7 minutes.
  • Add spiralized sweet potatoes to the pan. Using tongs combine all ingredients. Cover and continue to simmer on medium low heat.
  • Simmer until sweet potato noodles are cooked through. Add 1-2 tablespoons of water if needed to thin sauce and add more steam to cook noodles.
